White Chocolate Macadamia Nut Blondies

Gooey and chewy gluten-free, vegan blondies with dairy-free white chocolate chips. Chunks of White Chocolate + Macadamia Nuts MacroBars® are folded into the batter for a simple, delicious protein boost.
Ingredients
- 2 tbsp ground flaxseed
- 1/3 cup unsweetened almond milk
- 1/2 cup salted vegan butter, melted and cooled
- 1 cup light brown sugar
- 2 tsp pure vanilla extract
- 1 3/4 cup gluten-free 1:1 all-purpose flour
- 3/4 tsp baking powder
- 1/2 tsp fine salt
- 2 White Chocolate + Macadamia Nuts MacroBars®, torn into small pieces
- 1/4 cup macadamia nuts, chopped
- 1/2 cup vegan white chocolate chips, divided
Directions
- Preheat the oven to 350°F, then grease and line an 8x8-inch metal baking pan with parchment paper.
- In a small bowl, mix together ground flaxseed and almond milk, then set aside to thicken for 5 minutes.
- In a large bowl, whisk together vegan butter and light brown sugar until a paste-like consistency is reached. Then, stir in flax mixture and vanilla extract.
- Separately, combine gluten-free all-purpose flour, baking powder, and salt. Then, mix into wet ingredients, stirring until just combined.
- Fold in MacroBar pieces, chopped macadamia nuts, and half of vegan white chocolate chips.
- Pour batter into the prepared baking pan, spreading evenly. Sprinkle remaining white chocolate chips on top.
- Bake for 30-35 minutes, or until edges are golden brown slightly pulling away from pan. The center should appear just set.
- Let blondies cool in pan on a wire rack for 15 minutes, then remove from pan and place directly on wire rack to finish cooling completely.
- Cut into pieces and enjoy!
