Peppermint Patties

Rich, chewy Mint Chocolate Chip MacroBars® layered with a creamy peppermint filling. Coated in chocolate and sprinkled with crushed candy canes, these peppermint patties are a perfectly refreshing vegan, gluten-free treat.

Ingredients

  • ½ cup unsweetened coconut flakes
  • ½ cup powdered sugar
  • 1 ¼ - 1 ½ tsp aquafaba (liquid from a can of chickpeas)
  • ¼ tsp pure peppermint extract
  • 3 Mint Chocolate Chip MacroBars®
  • ½ cup dairy-free semi-sweet chocolate chips or chunks
  • ¼ tsp coconut oil
  • 1 vegan candy cane, finely crushed

Directions

  1. Pulse coconut flakes in a food processor until very fine. Then, transfer to a bowl and mix with powdered sugar, aquafaba, and peppermint extract until a thick dough forms.
  2. Shape dough into a ball, then roll out to roughly ⅛” thick. Using a 1” round cutter, cut out six circles, then chill in the freezer on a parchment-lined baking sheet.
  3. Meanwhile, microwave MacroBars® for 5–10 seconds until slightly softened, then cut out six rounds using the same cutter. Set aside.
  4. In a small heat-proof bowl, combine chocolate and coconut oil, then microwave until melted and smooth.
  5. Remove chilled peppermint dough, placing one peppermint layer atop each MacroBar circle. Dip each patty in melted chocolate, then immediately top with crushed candy canes.
  6. Chill in fridge or freezer for 5-10 minutes or until set, then enjoy!
