Caramelized Banana Crumble

Perfectly ripe bananas are baked until sweet, caramelized, and golden. They’re topped with a quick, delicious crumble and finished with a scoop of dairy-free whip or ice cream. 

Ingredients

  • 2 bananas, ripe but not spotted 
  • 2 tbsp melted coconut oil 
  • 1 tbsp coconut sugar, plus more for topping 
  • ¼ tsp ground cinnamon  
  • 1 pinch table salt 
  • 1 tbsp dairy-free chocolate chips 
  • 1 Oatmeal Chocolate Chip MacroBar®, torn in small pieces 
  • Dairy-free ice cream or whip, for serving 

Directions

  1. Preheat oven to 400°F and line a baking sheet with parchment. 
  2. In a small bowl, stir together melted coconut oil, coconut sugar, cinnamon, and salt. 
  3. Peel and cut bananas in half lengthwise, then place cut-side up on the prepared sheet. 
  4. Brush bananas with cinnamon-sugar oil mixture, then sprinkle with extra coconut sugar, dairy-free chocolate chips, and torn MacroBar® pieces. 
  5. Bake for 15 minutes, then broil 1–2 minutes until golden and caramelized.  
  6. Top with a scoop of dairy-free ice cream or whip, serve, and enjoy!
