Pecan Pie Bars

A classic pie transformed into a vegan, gluten-free and refined sugar-free bar, with a protein-packed crust. Topped with a gooey maple-pecan filling, these pie bars bake up chewy, rich, and delicious.

Ingredients

  • 1 ¼ cups almond flour, for crust
  • 3 tbsp salted vegan butter, chilled, for crust
  • ½ cup oat flour, for crust
  • ¼ tsp salt, for crust
  • ½ tsp cinnamon, for crust
  • 3 Maple Sea Salt MacroBars®, torn into small pieces, for crust
  • ½ cup brown rice syrup
  • ¼ cup maple syrup
  • ⅓ cup full-fat coconut milk
  • 2 tbsp ground flaxseed
  • 2 tbsp cornstarch
  • 1 tsp vanilla extract
  • ½ tsp cinnamon
  • ¼ tsp salt
  • 1 ¼ cup finely chopped pecans, plus extra for topping

Directions

  1. Preheat oven to 350°F and line an 8×8” metal pan with parchment paper.
  2. To make the crust, combine almond flour, oat flour, salt, cinnamon, and torn MacroBar® pieces in a food processor and pulse until crumbly.
  3. Add chilled vegan butter and pulse until just combined.
  4. Press crust mixture firmly into bottom of pan and bake for 10 minutes, then let cool completely.
  5. In a medium bowl, whisk brown rice syrup, maple syrup, coconut milk, flaxseed, cornstarch, vanilla, cinnamon, and salt together until smooth.
  6. Stir in pecans then let rest until thickened, about 10 minutes.
  7. Once filling has thickened and crust has cooled, pour filling into crust and bake at 350°F for 35–40 minutes, until bubbling with caramelized edges.
  8. Cool in pan on a wire rack for at least two hours before slicing.
  9. When ready to enjoy, garnish with additional pecans, slice, and serve!
