Strawberry Chocolate Chip Cookies

Eating more mindfully doesn't have to mean giving up dessert. These gluten-free and vegan cookies from @cookwith.cam are a sweet treat you can whip up in no time!

Ingredients

  • 1 cup gluten-free flour
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 cup vegan butter
  • 3/4 cup coconut sugar
  • 1/2 tsp vanilla
  • 1/2 cup aquafaba, liquid from chickpea can
  • 1 cup vegan chocolate chips
  • 1/2 cup strawberries, freeze-dried

Directions

  1. Preheat the oven to 400F.
  2. Whisk together dry ingredients in a bowl and set aside.
  3. In a separate bowl, use a hand mixer to whip the aquafaba until soft peaks form.
  4. Add the softened butter and vanilla to the dry ingredients and turn your stand mixer on medium until a dough forms.
  5. Add in the aquafaba and continue to mix at medium speed until well combined.
  6. Stir in the chocolate chips and freeze-dried strawberries.
  7. Use an ice cream scoop to form small dough balls.
  8. Place dough 2 in apart on greased baking sheet.9. Cook for 8-10 minutes.
