Maple Coffee Cake

Gluten-free, vegan, and oh-so-delicious, this perfectly moist maple coffee cake features a crunchy streusel topping with a protein-packed twist.

Ingredients

  • 1/2 cup coconut sugar, for filling & streusel topping
  • 1 tbsp ground cinnamon, for filling & streusel topping
  • 2 tbsp coconut oil, room temperature, for filling & streusel topping
  • 1/3 cup gluten-free all-purpose flour, for filling & streusel topping
  • 2 Maple Sea Salt MacroBars®, torn into ¼” pieces, for filling & streusel topping
  • 1/2 cup coconut oil, melted, for cake
  • 3/4 cup unsweetened dairy-free yogurt, room temperature, for cake
  • 1/2 cup dairy-free milk, room temperature, for cake
  • 1 cup maple syrup, for cake
  • 1 tbsp vanilla extract, for cake
  • 2 3/4 cup gluten-free all-purpose flour, for cake
  • 2 tsp baking powder, for cake
  • 1/2 tsp baking soda, for cake
  • 1/2 tsp salt, for cake
  • 1/3 cup unsweetened dairy-free yogurt, for icing
  • 1 - 2 tbsp maple syrup, for icing
  • 1/4 tsp vanilla extract, for icing

Directions

  1. Preheat oven to 350°F, then grease and line a square 8x8” metal baking pan with parchment paper.
  2. Prep filling and streusel topping: combine coconut sugar and cinnamon in a medium mixing bowl, reserving half (filling). To remaining half (topping), add 2 tbsp coconut oil and ⅓ cup gluten-free all-purpose flour, mix until a crumble forms. Add MacroBar bits and combine to form the streusel topping.
  3. Make cake: Whisk coconut oil, dairy-free yogurt and milk, maple syrup, and vanilla extract together in a medium bowl.
  4. Separately, sift together gluten-free flour, baking powder, baking soda, and salt.
  5. Mix wet and dry ingredients together until smooth batter forms.
  6. Spread half of batter into the bottom of prepared pan, then sprinkle filling evenly on top.
  7. Gently spoon remaining half of batter on top and spread evenly. Sprinkle on streusel topping, slightly pressing into batter.
  8. Bake for 40-45 minutes, or until cake is golden brown and a toothpick inserted in the center removes cleanly.
  9. Let cool in pan for 5-10 minutes, then transfer to a wire rack to cool completely before slicing.
  10. Finally, mix icing ingredients together in a small bowl, then drizzle on top of each slice when ready to serve... enjoy!
