Chocolate Dipped Peanut Marshmallow Bars

Have you ever craved your favorite candy bar but wished for a cleaner, protein-packed alternative? We certainly have, which is why we’ve created these delicious Chocolate Dipped Peanut Marshmallow Bars!

Ingredients

  • 4 Peanut Butter MacroBars®
  • 2 1/3 cup cup roasted, salted peanuts
  • 1 cup full-fat coconut cream
  • 1 cup coconut sugar
  • 2 1/3 cup vegan mini marshmallows
  • 1/4 cup creamy peanut butter
  • 8 oz dairy-free dark chocolate, roughly chopped
  • flaky sea salt

Directions

  1. Line an 8x8” square baking dish with parchment paper.
  2. Using a food processor, blend Peanut Butter MacroBars and ⅓ cup of peanuts until coarsely crumbled, then firmly press the mixture into the bottom of baking dish.
  3. Add coconut cream and coconut sugar to a medium pot. Bring to a simmer over medium-low heat, then reduce heat to low and simmer for 5-7 minutes until slightly thickened, stirring frequently.
  4. Remove pot from heat and add vegan marshmallows. Mix until mostly melted, then stir in peanut butter and 1 cup of peanuts.
  5. Spoon mixture onto MacroBar base layer. Top with remaining 1 cup of peanuts and flaky sea salt.
  6. Place in the freezer to set for approx. 1 hour. Once set, remove and slice into 8-12 bars.
  7. Add dark chocolate to a small heat-proof bowl and place over a pot of simmering water. Stir frequently until fully melted.
  8. Dip bottoms of bars into melted chocolate and place on a parchment-lined baking sheet. Return bars to freezer until chocolate is cooled and hard.
  9. Let bars sit at room temperature for 5-10 minutes and enjoy!
