Indulge in our vegan version of this nostalgic treat! It's the perfect dessert for all of your summer get-togethers.

  1. Combine cornstarch and salt in a medium saucepan.
  2. Place pan over medium heat and gradually pour in dairy-free milk and maple syrup, whisking vigorously to prevent lumps. Pour in coconut milk, then simmer for 5-10 minutes, stirring continuously until pudding has thickened.
  3. Remove pudding from heat, then stir in vegan butter and vanilla extract until melted and combined.
  4. Transfer pudding to a bowl and top with an airtight cover. Let cool at room temperature for 10-15 minutes, then move to the fridge until desired temperature and thickness are reached.
  5. In the meantime, slice bananas into coins and chop MacroBars into bite-sized pieces.
  6. When ready to serve, begin by placing a layer of MacroBar bits at the bottom of your serving glass. Follow with a layer of sliced bananas, then spoon pudding on top. Repeat layering until the glass is full. Top with dairy-free whipped cream and enjoy!
