Coconut Macaroons

These light and delectable vegan Coconut Macaroons are the perfect pairing to an afternoon cup of tea or for when you need a sweet and yummy pick-me-up.

  1. Preheat the oven to 325 degrees F and line a large baking sheet with parchment paper.
  2. Place a small saucepan over medium heat, add maple syrup and bring to a boil. Mix in coconut milk and simmer for 3 minutes.
  3. Pour maple syrup and coconut milk mixture into a medium bowl. Stir in shredded coconut, almond flour, and salt.
  4. Use a 2 tbsp cookie scoop to portion out macaroons onto prepared baking sheet.
  5. Bake macaroons for 20-22 minutes until barely golden on top, then remove and allow to cool completely on baking sheet.
  6. Meanwhile, add chocolate to a small heat proof bowl, and place over a pot of simmering water. Stir frequently until fully melted. Remove from heat.
  7. Dip cooled macaroons into melted chocolate, then immediately press onto MacroBar circles. Enjoy!
