Double Chocolate Peanut Butter Blossoms

A no-bake ‘inside-out’ version of classic peanut butter blossoms with a chewy chocolate base and a creamy, dairy-free peanut butter fudge ‘drop’ in the center.

  1. In a small saucepan, combine peanut butter, coconut oil, white chocolate chips, and maple syrup. Warm over low heat, stirring until fully melted. 
  2. Add vanilla and salt, transfer to a bowl, and place in freezer for 5 to 8 minutes, until mixture runs softly off a spoon.  
  3. Scoop mixture into a piping bag fitted with a small round tip. Pipe small drops onto a parchment-lined tray, making 12 peanut butter fudge drops. 
  4. Refrigerate tray for at least 15 minutes until drops are firm to the touch.  
  5. While fudge drops cool, cut each MacroBar into thirds, shaping each into a small round cookie with a well in the center.  
  6. When ready to serve, spread a bit of peanut butter into each well, then gently press a fudge drop on top.  
  7. Repeat as desired, serve, and enjoy!
