White Chocolate Macadamia Nut Blondies

Gooey and chewy gluten-free, vegan blondies with dairy-free white chocolate chips. Chunks of White Chocolate + Macadamia Nuts MacroBars® are folded into the batter for a simple, delicious protein boost.

Ingredients

  • 2 tbsp ground flaxseed
  • 1/3 cup unsweetened almond milk
  • 1/2 cup salted vegan butter, melted and cooled
  • 1 cup light brown sugar
  • 2 tsp pure vanilla extract
  • 1 3/4 cup gluten-free 1:1 all-purpose flour
  • 3/4 tsp baking powder
  • 1/2 tsp fine salt
  • 2 White Chocolate + Macadamia Nuts MacroBars®, torn into small pieces
  • 1/4 cup macadamia nuts, chopped
  • 1/2 cup vegan white chocolate chips, divided

Directions

1. Preheat the oven to 350°F, then grease and line an 8x8-inch metal baking pan with parchment paper.
2. In a small bowl, mix together ground flaxseed and almond milk, then set aside to thicken for 5 minutes.
3. In a large bowl, whisk together vegan butter and light brown sugar until a paste-like consistency is reached. Then, stir in flax mixture and vanilla extract.
4. Separately, combine gluten-free all-purpose flour, baking powder, and salt. Then, mix into wet ingredients, stirring until just combined.
5. Fold in MacroBar pieces, chopped macadamia nuts, and half of vegan white chocolate chips.
6. Pour batter into the prepared baking pan, spreading evenly. Sprinkle remaining white chocolate chips on top.
7. Bake for 30-35 minutes, or until edges are golden brown slightly pulling away from pan. The center should appear just set.
8. Let blondies cool in pan on a wire rack for 15 minutes, then remove from pan and place directly on wire rack to finish cooling completely.
9. Cut into pieces and enjoy!
