Peanut Butter Swirl Brownies

These vegan Peanut Butter Swirl Brownies are a major upgrade to your average brownie. The best part is that you can feel guilt-free about indulging in this vegan, gluten-free, and dairy-free dessert!

Ingredients
- 8 Peanut Butter Chocolate Chip MacroBars®
- 1/4 cup plant-based butter
- 1/2 cup unsweetened plant-based milk of choice
- 1/2 cup vegan semi-sweet chocolate chips
- 1 cup granulated cane sugar
- 1/4 cup light brown sugar, packed
- 2 tsp vanilla extract
- 1 tsp instant espresso powder
- 1/2 cup dutch-processed cocoa powder
- 1 tsp apple cider vinegar or white vinegar
- 1 1/2 cups 1:1 gluten-free all-purpose flour
- 3/4 tsp baking powder
- 1/4 tsp salt
- 1/3 cup vegan dark chocolate chunks
- 3 tbsp creamy peanut butter, slightly melted
Directions
1. Preheat the oven to 350°F and line an 8x8” metal baking pan with parchment paper.
2. Line bottom of baking pan with a single layer of Peanut Butter Chocolate Chip MacroBars, trimming if needed.
3. Combine vegan butter, dairy-free milk, and ½ cup chocolate chips in a microwave-safe mixing bowl and heat in 30-second increments until mixture is melted and simmering. Immediately add both sugars to hot mixture, whisking vigorously for 1 minute until dissolved. Don’t skip this step - this is what gives brownies a shiny, crackly top!
4. Add vanilla extract, espresso powder, and cocoa powder to mixture. Whisk to combine, then mix in vinegar.
5. In a separate bowl, combine gluten-free flour, baking powder, and salt.
6. Once mixed, fold wet and dry ingredients together until just combined. Fold in mix-ins if using.
7. Pour batter into prepared baking pan. Using a toothpick or butter knife, swirl peanut butter into top of batter.
8. Bake for 38-42 minutes until top looks glossy and set.
9. Allow brownies to cool in pan for 30 minutes before removing. Once removed from the pan, let cool for 1½ - 2 hours on a wire rack before slicing. Enjoy!
